Today is National Tortilla Chip Day! How am I celebrating? By enjoying a breakfast of migas. What are migas exactly? Migas is a Tex-Mex breakfast dish made of eggs, corn tortilla chips, onions and tomatoes. My grandparents made migas for us as children. My mom would cook them as well and now I make them for my family. Considered also a Tex-Mex dish, you can enjoy migas in many Tex-Mex restaurants that serve breakfast. Migas Recipe for National Tortilla Chip Day 2/24

Here’s what you’ll need to make your own migas:

  • 6 corn tortillas sliced into thick strips or triangles
  • 4 eggs
  • 1/2 an onion chopped
  • 1 whole tomato chopped
  • 1/2 cup of frying oil for tortillas or you can bake them

  • Warm the oil in a non-stick frying pan at medium heat. *You don’t want to cook the tortillas too fast, they will burn.
  • Once the oil is at medium heat throw in the tortillas. 
  • Let the tortillas cook until they are a beautiful golden yellow. Take out of oil and set on a paper towel to dry off oil.
  • You can use the same pan if you simply pour out the remainder of the oil into your oil cup if you save it. (I totally do.) It’s time to sauté the onions and that only takes a little oil. While they cook add a pinch of salt to sweat the onions just a bit.
  • A little piece of tortilla got left behind. It’s ok! Once your onions are soft and have some brown color it’s time to throw in your pre-scrambled eggs. I like to scramble my eggs prior to pouring into my skillet. Just my preference, you can totally crack your eggs into the onions.

  • Once the scrambled eggs are cooking, throw in your tomatoes.
  • Add the fried tortillas and mix carefully.

Migas, a delicious Tex-Mex dish you can enjoy on National Tortilla day or any day for breakfast, lunch or dinner. For additional flavors add jalapenos when you throw in the tomatoes and serve with a side of salsa for more heat. Or top with sour cream, crema fresca or cotija cheese. You can eat this as a full meal or add a side of refried beans too.

    I usually make my migas with leftover tortilla chips. It’s very similar to the Jewish dish matzo brei.

    Looks so yummy! I have never heard of this dish before, but I love fried tortillas!
