I love winter for the most part. It changes the way I look at cooking, the way I plan meals and the recipes I try. But, what really makes me happy about the winter season is comforting soup! I love all kinds of soups, though I don’t know how to make that many. I love creating my own version of homemade Chicken Noodle Soup, my NEW famous Black-Eyed Pea Soup and my oh so yummy Beef Stew. In my definition it is a stew, but it works for comfort! Yes, I must include Chili in this list (but it’s not a soup either now is it?). Soup is amazing. It warms the tummy and soothes the soul.
There are so many different resources out there to find delicious recipes. My favorites are inspired by classics but I love to add my own Latina flavor and flare, like my Black-Eyed Pea Soup recipe. I asked around and got some delicious Comforting Soup recipes (that are new to me at least) to share with you today. Andrea from Adventures in All Things Food is so inspiring. Her Mexican Corn Zucchini Soup made my mouth water. It’s got creativity, zing and a bit of spice. Also, to compliment her dish, she created Sweet Corn Bread and Sausage Stuffed Jalepeños. Talk about kicking the heat up a notch. Now I’m not a huge fan of heat, but these little stuffed peppers sound amazing.
Debra from The Harried Mom made my heart melt with her Crock-pot Loaded Baked Potato Soup. I’m all for simplifying and minimizing and multi-tasking. By using the Crock-pot, it frees up your hands and time to be able to do other things while the delightful aroma fills your home.
Dina from My Un-Entitled Life created a copycat version of one of Olive Garden’s soups. The Zuppa Toscana Soup recipe brought the creamy, rich, decadent restaurant style quality into her home for all to enjoy.
Chrysa from Thrifty Jinxy created a fabulous, colorful, rich Butternut Squash Soup recipe. I’ve never had this kind of soup before, but after drooling on the screen a bit, I definitely cannot wait to try it.
